Christmas in Heaven

In February of this year I lost my beloved Grandmother, Nanny.  She and my Granddaddy had been married 72 years!!!  To know her was a special gift, and to be loved by her was to feel special and one of a kind.  Even in her 80's, she would scoot around her kitchen to swing music turned up so loud you thought the windows would burst!! 



Then this November, we lost my precious baby brother Alex.  I can honestly say that I have never experienced such pain or sense of emptiness in life!  One thing that I have learned this past month is that I can't question GOD, all I can do is lean on him, otherwise there is no other way to make it through.  I always knew how special he was to me and my family, but since his passing, all of the love and support showed by others has been so overwhelming!  To hear and see how much he meant and touched so many other lives in his short 21 years has been so astonishing!!  I can only aspire to mean that much to others in my lifetime.



This will be our first Christmas without Nanny and Alex.  It is going to be a very difficult time, but as a family we will be there for each other and help each other through.  
I heard this song the other day, and it is so fitting......


My other brother also posted this song on Alex's Facebook page.  It is a perfectly written song for how we are feeling.  I hope if there are others that are struggling as we are, that this too will touch you as it has me.

Yummy Muddy Buddies!!!

Today I am linking up with Kelly's Korner. She is sharing favorite holiday recipes.  The hardest part is coming up with just one!!!  There are so many things that I make every year around this time, but there is one thing that I can't go anywhere without having to bring.......

Muddy Buddies!!!!! 


Growing up we also called this Puppy Chow, but whatever you call it, it's delicious!!!  They are so simple to make!  Every time this year I end up making DOZENS of batches of Muddy Buddies to take to holiday parties and such.  Here is the recipe as you will find it on the Betty Crocker Website:



INGREDIENTS:
9 cups Corn Chex®, Rice Chex®, Wheat Chex® or Chocolate Chex® cereal (or combination)
1 cup semisweet chocolate chips
1/2 cup peanut butter
1/4 cup butter or margarine
1 teaspoon vanilla
1 1/2 cups powdered sugar

STEP 1:
Into large bowl, measure cereal; set aside.

STEP 2:
In 1-quart microwavable bowl, microwave chocolate chips, peanut butter and butter uncovered on High 1 minute; stir. Microwave about 30 seconds longer or until mixture can be stirred smooth. Stir in vanilla. Pour mixture over cereal, stirring until evenly coated. Pour into 2-gallon resealable food-storage plastic bag.

STEP 3:
Add powdered sugar. Seal bag; shake until well coated. Spread on waxed paper to cool. Store in airtight container in refrigerator.

Yummy Yummy, Some Love for My Tummy!!!

Between Pinterest and one of my new favorite blogs Texas Cottage, I have been finding some really great new recipes!!  Before I post some of these scrumptious treats, the Texas Cottage blog has this really cute gift idea page.  She has found and posted many great ideas on gifts in a jar. It's a twist on the old idea of giving cookie mixes in a jar.  It is definitely worth you checking out here.

Cinnamon Roll Pancakes




Yield:
4 servings (4 pancakes)

Ingredients:
PANCAKES:
1 cup all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
1 Tablespoon canola oil
1 large egg, lightly beaten

CINNAMON FILLING:
1/2 cup butter, melted
3/4 cup brown sugar, packed
1 Tablespoon ground cinnamon

CREAM CHEESE GLAZE:
4 Tablespoons butter
2 ounces cream cheese
3/4 cup powdered sugar
1/2 teaspoon vanilla extract

Directions:1. Prepare pancake batter: In a medium bowl, whisk together flour, baking powder and salt. Whisk in milk, oil and egg, just until batter is moistened (a few small lumps are fine).

2. In a medium bowl, mix butter, brown sugar and cinnamon. Scoop the filling into a small zip baggie and set aside. You don't want this to remain super-liquidy. It's best if it becomes a consistency similar to toothpaste.

3. In a medium, microwave-safe bowl- heat butter and cream cheese until melted. Whisk together until smooth; whisk in powdered sugar and vanilla extract; set aside.

4. Heat large skillet over medium-low heat. Spray with nonstick spray. Scoop about 3/4 cup batter onto the skillet. Snip the corner of your baggie of filling and squeeze a spiral of the filling onto the top of the pancake. When bubbles begin to appear on the surface, flip carefully with a thin spatula, and cook until browned on the underside, 1 to 2 minutes more. Transfer to a baking sheet or platter and keep in a warm oven until ready to serve.


5. When ready to serve, spoon warmed glaze onto the top of each pancake.

Tips:*Keep the heat low or your pancakes might cook up too quickly. Don't flip them until you see those bubbles starting to pop on top. Flip them with a wide spatula so you can grasp the whole thing without batter and filling dripping all over the place!
*It's best if you pour the batter onto your skillet, wait a minute or so and then swirl the cinnamon onto the batter. That'll give it a chance to set a little before you add the swirl.
*If your baggie of filling begins to get too thick, just pop it in the microwave for a few seconds to soften it up again. On that same note, it shouldn't be too runny. The consistency of soft toothpaste is perfect. If it's melty and runny, it will tend to run all over your pancakes. Once you micro it, let it sit on the counter at room temp for a while until it thickens slightly.

Buttercream Blondies




Ingredients
1 cup butter
1 cup light brown sugar
1/2 cup granulated sugar
2 tsp vanilla
2 eggs
2 1/2 cups all purpose flour
1 tsp baking soda
1 tsp coarse sea salt
2 cups coarsely chopped Butterfinger Bars (approx 16 "Fun Size" bars)

Instructions
Preheat oven to 350°
Cream butter and sugars in mixing bowl.
Add the vanilla and eggs and mix until incorporated.
On low add your dry ingredients (flour, salt and baking soda) until just combined.
Stir in your chopped Butterfinger.
Spread in a 9×13 baking dish and bake for 25 minutes until center is JUST set.
Remove from oven and cool completely.
Preparation time: 5 minute(s)
Cooking time: 25 minute(s)

Butterfinger Buttercream:
Ingredients
1/2 cup room temp butter (1 stick)
1/2 cup vegetable shortening
2 1/2 – 3 cups powdered sugar
1/2 cup chopped Butterfinger Bars (approx 4 "Fun Size" bars)

InstructionsCream the butter and shortening together until smooth.
Add in you powdered sugar on low speed. Turn speed up to medium and mix until smooth
Stir in your chopped Butterfinger. (I sprinkled mine on top rather than stirring them in!)
Spread on your cooled blondies

Preparation time: 5 minute(s)

Broccoli Cheese Soup


Note: To make my life easier, while the soup is coming together, I put the chopped broccoli in a large glass bowl, cover with saran wrap and microwave for about 3-4 minutes. It cooks perfectly and just in time to add it to the soup.

*Serves 4

INGREDIENTS:
1 3/4 cups chicken broth
1 small onion, diced
1/3 cup all-purpose flour
1/4 cup (4 tablespoons) butter
1/2 teaspoon pepper
1/2 teaspoon salt
2 cups milk
1 1/2 cup shredded cheddar cheese, preferably sharp or extra sharp
1/2 cup shredded swiss cheese
2 1/2 to 3 cups chopped, lightly steamed or blanched broccoli

DIRECTIONS:
Simmer chicken broth and chopped onion for 15-20 minutes in a covered small saucepan, until onions are soft. Heat milk in microwave for 1-2 minutes. In a separate medium-sized stockpot, melt butter then add flour, salt and pepper. Cook together, stirring constantly, for 2 minutes, then whisk in warmed milk. Stir and heat together on medium heat until soup starts to thicken, about 5-8 minutes. Add warmed chicken broth and continue to stir until well blended. Add cheeses and stir until completely melted. Stir in seamed broccoli. Add more salt and pepper to taste, if needed. Serve immediately in bowls or bread bowls.

Show me Christmas


I borrowed this idea from Ginny's Blog over at Musings from a breast cancer optimist.  Two other blogs, FromMrstoMama and AlyBlogs, have teamed up and brought this year's Show me Christmas. This is where you can share your Christmas list, your Christmas decorations, your traditions, and your Christmas day on the dates above.
Today is Show us your Christmas List.  It is really neat to see what everyone is wanting this Christmas!! I have to be honest though, my list is very practical.  I have always had a problem with wanting things for myself!  I have strong guilt when it comes to receiving gifts, the fun for me is in the giving!!

Here is my list.....

Kimono dress from Target.  I have one of these, but I seriously want one in every color.  They are super comfy and durable enough for me to teach in.  You'd be surprised what my students can do to my clothes!!!  I like that it's casual, but that I can make it look nicer if I have to.

I will be off for two weeks for Christmas break.  No work means no pay, no pay means no money!  Anyway, you get the picture.  So yes, even at almost 30 I am asking my mom to give me practical things like groceries for Christmas.  Just like I used to do in college!!!  haha!!!

But what I want most for Christmas is......


For this sweet boy of mine to have a wonderful Christmas....

AND.......

For my wonderful and amazing parents to be able to find peace and joy this holiday season.  This is going to be the hardest Christmas ever, but I hope that having the grand babies and the rest of us kids there will help them through!  They really do deserve a wonderful and special holiday!!!
